Count how many hours you spend on your your phone each day - there’s probably an app for it. Now go to Settings, search for Greyscale and turn it on; icons and images should all become colourless. Use your phone for a few days and count again.

This is one of the simplest and most effective ways of reducing screen time, short of turning your phone off entirely - some people report reductions of 25% or more. The removal of the candy-coloured app icons makes the screen less stimulating to the brain’s reward system.
